"I read somewhere a while back that some folks keep the heads (high proof) and let it mellow out (air and time) then it's drinkable.
I also read that some set the high proof aside and use that aging (over 120 proof) because in a few months time it will be smoother.
what are the thoughts of the forum on this? What are the side effects of taking the heads cutting it down to 100 proof for drinking
or aging at no less than 120 for several months then cutting down for drinking. hangover, headache? I also know that some take a
bit of heads and nasty tails to add flavor. I personally don't keep any tails in my hooch cabinet. What tails I do have i pour back into
the still on the next run. How much heads do you keep if any, just curious...

"I know when we drink comercial likker like Jack Daniels for example they do have or at least allow a certain amount of heads and tails in the finished product --how much is prolly not something they will devulge of course but I'm curious to see how many folks have experimented with this idea and what they have found. I dont think you'll die from something like that left in your hooch but it just dont sound good to me, but I do drink JD and like it alot.
Just the idea of those compounds in there kinda make's me feel all gooey inside."

One more thing...I hope Rick (Admin) chimes in on this, he has taught folks how to run stills from 5 gallons to full fledged distilleries. Now thats not to say he knows how much heads or tails to add to the finished product but I would bet he knows more than we do.....how bout it big guy, got any info in that department that you can share with us????????????

I mainly do rums, so can't comment on neutrals. I've tried aging heads for about 2~3 months and it did smooth it out a tad but still tasted like crap to me!. I can't stand heads in my final product, it's just like drinking store bought rubbish. Out of the 4~5 bottles I get from a run I like to put a.little tails in one bottle to give it some.more body so to speak, bit more sweet molasses flavors for when I feel like a stronger rum. I did age some neutral with heads ages ago and it tasted like bourbon to me!, I don't like bourbon though lol.

This is honestly something that people have extremely different views about. Some make very fine cuts and try to pull practically neutral spirits (we have a couple of rum distilleries doing this). I find that closer to a vodka than a rum, personally. Others make those cuts and add a small amount of tails (more so than heads), to get some character. And there are also those who will blur the lines on the cuts a bit, and start collecting slightly earlier and/or run slightly further into tails. There is not really a right or wrong here, although distillers will swear that their method is the best.
