I have a question about the sg of my mash. I am doing a 6 1/2 gal total I used three large cans of pears and two small cans of peaches, about 17 pounds of sugar. the yeast that I used was Super Yeast X-press 20% ABV. The question that I have is when I checked the sg of the mash now it is showing 1.00 but it is still bubbling. is this normal. All my other ones have stoped around 1.00 but this one is still going strong.

If the wash is still working, you're doing fine. A sugar wash will normally finish below SG 1.000. Just let the yeast do it's thing.

"If one of my sugar washes didn't go below 1.000, I'd figure something went wrong. I expect to see the FG around 0.992 or so.
I don't use turbos, so I wouldn't know what to expect for fermentation time. But my sugar washes are usually finished in about 5 - 9 days if I use baker's yeast ... and about twice that with a champagne yeast. I keep the temps around 20 C (or lower). But given that you're using a turbo and so much sugar, I'm guessing you're going for max alcohol ... so the lower your gravity goes, the better.
If this wash of yours is behaving differently than the rest, you might want to check your notes to figure out why ... determine what's different. If it's taking longer but producing more alcohol, it would be handy to know why ... so you can get repeat performances. :)"
