Thank you for the opportunity to ask.
currently, my ferments are in buckets, But I own this huge contraption that seems like would be useful somehow.
Some years ago, I purchased a SS water jacket double boiler from a bee keeping supply, it's huge, 80 gallons is a guess. I used this boiler for soap making, nothing else. The thermostat goes to 200*F. The boiler has a lid, not a sealed lid, but a nice ss cover, and has a wonderfully huge ball valve to drain the tank, plus another valve to remove the boiler water. The boiler even has a beautiful SS cart with wheels, I need to make use of my boiler. It is lead free and the ball valve is stainless and brass.
My still is 26 gallon pot still. I love it, 7 brews thru it with awesome success.
At this time I have my first AG mix working. I'm not a spring chick and the fermenting buckets are heavy and then moved in a small heated room of 78*F.
Am I thinking correctly that the honey boiler would work just as well, maybe better, as a fermenter, forget the buckets? The honey boiler thermostat could be set to 78*F which would only warm the boiler water if the temp inside fell to less than that. I could not seal the lid on, for use of an airlock, but the big huge lid would allow for easy stirring instead Of unsnapping all those buckets. My dad never used an airlock for all his years of wine making and apple jack.
Can someone give me imput on this boiler as a fermenter? I can't see why not, maybe someone else will give opinions on airlock and if they absolutely are necessary on grain ferments and the fact that the boiler is not air tight.
