,If this gets posted twice, sorry for my technical inabilities!,. Anyway, the recommendation w/ the Pot Distiller's Turbo yeast ,first time I'm using it, is to keep the pH between 4-5. The plum juice that I ferment is always very acidic ,<pH3,. I usually consider that this low pH helps keep out contamination from unwanted organisms. Additionally, I always treat my juice/must w/ Campden tablets before starting the fermentation. This recommendation is not on the pack. Is Turbo Yeast especially sensitive to Campden? Also, will I not get the 20% alcohol that I'm hoping for if I don't adjust the pH? Also, not having 'chalk' on hand, can I adjust the pH with baking soda ,sodium bicarbonate, or NaOH ,Both of which I do have on hand,? Thanks!

I HAVE NEVER BOTHERD TESTING THE PH OF MY WASH PRIOR TO DISTILLATION I HAVE MADE SURE IT WAS AT CORRECT ABV WHAT ARE ATVANTAGES TO TESTING THE PH AND HOW DO I GO ABOUT IT? I REALIZE WITH LITMUS BUT WHAT ARE THE NUMBERS
