When using the immersion heater for the amazing still, do you set the red button that has 45, 50, 55c to one of those numbers and leave it? or do you try and get the overall temperature between 45c-50c in the bucket? Because if you set the immersion heater on 50c the actual temperature reading is much higher somewhere in the 60's is this right?

depends on how well you 'cool' the bucket... the circulation of the air on/around the bucket and the temperature of the surrounding air. i set my immersion heater
122 F and that gets me usually ~50 C, maybe a little more
