I summon the all powerful Masters of the Oak! my question is.. I'd like to get a 2 gallon keg with a tap for whiskey, and just add to it as I use it, will this work? and do I want charred or toasted?

I await the sages of oak and those of a higher budget than I. For thy keg is expensive.

Friend of mind is using oak charred. He is in the process of adding barrels up to 10 and rotate as used. So far what he has in the barrel tastes good.

I can vouch for that. I've tasted his stuff to. It is really good. He also made some Scotch using wood chips that is awsome! I think he is gettting his barrels from Mile-Hi. They are having a sell on them right now.
