"I wondered if anyone had fermented and distilled pineapple? I have googled it but I didn't find anything on using pineapple in the actual ferment process, as to make wine. I guess I could google how to make pineapple wine. huh.

Anyone done this before?"

We supply a commercial distillery in HI that does exactly this... and they charge a fortune for their product. Tongue

I bet they do. I bet it's delicious also. Have you ever tried it? Is it wine or distillate?
I would really like to make some pineapple brandy but I'm thinking the flavor would just wash away.

Ahh. I don't mind vodka, but that don't sound like no fun. I guess sometime or another, I'll have to explore the unknown.

It's on my bucket list ... but in my case it would be for the bottle, not the boiler.

So far I've just been doing a bit of research ... and looking at the various off-the-shelf pineapple juice products for a test batch. What I've found is that it is very similar to apple juice in terms of fermentable sugar content. And it is usually pasteurized and bottled/canned without the preservatives that can cause fermentation problems (e.g. sorbate) ... just some ascorbic acid (Vitamin C) which won't interfere with fermentation. There are also several frozen concentrate products that can come in handy if you plan to back sweeten ... or if you want to bring the gravity up.

The motivation for me is a sweet pineapple wine for the hot months ... something that would be crystal clear, refreshing, and suitable for serving over a glass full of ice. I tried lemon wine and it was quite good, but after a few glasses it starts to bother my stomach due to the acidity I suppose. And lemon juice juice doesn't have nearly as much sugar as pineapple juice. Plus the store bought juice that's available to me has sorbates ... so getting the fermentation going is a bit trickier.

Anyway, I think pineapple wine would make a very quaffable drink for those humid summer evenings on the patio."

I tend to agree with you John. I think it will also make a fine distillate if the flavor doent become to washed but as you said.... some back flavoring fix that.
