"Hey all. Put together a corn mash last night. Took a fullsize coffee can of cracked corn, boiled it for about 30 minutes, put it in my ferment barrel, added about 10 gallons of water to room temp (~75 degrees), 5 lbs of white sugar, and my yeast. Initial SG of about 1.018. Any ideas? Only thing I can think of is not enough sugar, but for only 10 gallons of liquid, shouldn't 5 lbs be enough?

"White table sugar (sucrose) will give you roughly 46 ppg. So (46 points x 5 lbs)/10 gallons = 23 ... or an SG about 1.023. So you're just a little bit low ... but maybe you didn't adjust your reading based on the temp? At 75 F you need to add about 0.002 to your reading ... so if you didn't already take the temp into consideration your adjusted (actual) SG would be 1.020. And if you read from the top (rather than the bottom) of the meniscus, you could have easily read a point or two on the low side.

I'd say you're probably right on track given the amount of water & sugar."
