I have been doing this for quite a while and have never had this happen. The last 2 runs I've done have been crystal clear until I proofed and added oak to it. Been using tap water all along and using oak chips from the same supplier. Why is it getting cloudy now. Help please.

Somethin' changed in your water source, bro? That's all I can think of... Try some distilled water and see if you get same clouding.

could be you ran to far into the tails if all else was the same

I'm guessing like Red said, something in the water changed. We proof each jar individually. Every one clouded.

Proofin's one place I am a pissant about using distilled water...Not Ozarka spring, or even my filtered water spigot.

I also test the distilled water I get with a zero water meter which gives a measure of solids in the water. I got the meter some time ago with the zero water filter and pitcher, but the pitchers really not big enough when you need more than about 3 quarts+ but the meter is damn handy.. BigGrin You can see just how "Clean" the purchased distilled water is...

I never had a problem using my bottled water. Bought a gal of distilled water at Wally World and it turned mine cloudy. Didn't affect the taste but it bothers me. Back to the Culligan stuff I guess."

When i'm in Wally's World I usually get a gallon or two of their distilled water. I've never had any problems with it turning my spirits cloudy. I used tap water once from our city source and that did indeed turn it cloudy. Good luck to you cork hope you figure it out.

"Water and oil don't mix. During distillation, fusel alcohols are concentrated in the feints or ""tails"" at the end of the distillation run. They have an oily consistency, which is noticeable to the distiller, hence the other name ""fusel oil"". If desired, these heavier alcohols can be almost completely separated in a reflux still. Freeze distillation, on the other hand, does not remove fusel alcohols.

Fusel alcohols are formed when fermentation occurs"

I started boiling the distilled water and the problem is solved
