Ok gunna start fermenting now can I use a turbo yeast or an AG yeast or just flyschmans. Once it's done fermenting and I siphon it of to a clean barrel to settle how long can I let settle. Lets say its done fermenting Monday can I let it settle until the weekend to run it.

the ag yeast or any bakers yeast would be better than the turbo unless you're making fuel and yes you can let it sit until the weekend to run
