Does malted barley lose its enzyme activity with storage time. I have read that it best to crack right before using the malt. I was given some 6 row that's 2 years old and was crushed. Is it OK to use, smells fine. Maybe increase the amount? Thanks, B.

I read somewhere that once crashed, 6 months, it would not be as fresh. Of course that was for beer and beer you're worried about flavor.
I think the enzymes would still be present, they might not be as productive as if they were fresh, use a longer mash time. It also depends on how it was stored, if it was proper storage then obviously that would be better.
Give it a taste, if the taste is good and you think it is fine than why not do an experiment and let us know how it turns out.
