Newbie question! I just completed my reflux still with a 3' X 40' copper tower packed with rolled up expanded stainless steel grating. I ran it last night with a batch of my dad's failed wine and was wondering about temps. I got a nice drip at about 75C/167f at the top of the tower and collected to 85C/185F. I have no idea how hot the mash was, but it was boiling pretty hard. Can you get the mash too hot or should I just watch tower temp?? - I see posts that say they collect from 172f to 178f is this mash temp or tower temp? is boiling mash too extreme?

Cobbler:

Don't worry about what's happening in your boiler, measure your vapor at the top of the tower. If you are maintaining 75-79dC you are doing great. Just keep a slow drip, 1-4 drips per second and you will be fine. And above all, have fun!
