I have been doing this for some time and this last batch is giving me trouble. I added 34 cups sugar to hot water, dissolved and added cool aerated water to 25 l. Added 48 Turbo yeast when temp was 18 degrees and let it sit for about 10 days. Actually did two batches at once. One batch ihas cleared nicely and the other is staying thick, gooey and very cloudy. What happened and what should I do?

Dean, Seems I read that 25 cups sugar = 8Kg of sugar. 34 in 25 L? I am really surprised fermentation started at all, but obviously did. Have you checked your final TG,as i'm sure there must be some unfermented sugar left. If not, you need to clone that mutant yeast- you would make a fortune.

I calculated the cups sugar in 8 kg. and it is 35 according to the computer conversion. I've used 34 cups before and it worked fine. I'm thinking there may be a problem with the yeast - what do you think??? I used Sparkeloid for a clearing agent and it settled some but still like glue and cloudy.

Dean. I had an all grain mash do that with me one time. I finally stilled it, but didn't get the volume I expected. What I did get was good. I have no idea why it was like that. And yes, you were right about the sugar volume. Sorry.

34 cups of sugar is only 17 lbs. That should be fine in 6.5 gallons of water to make a OG of around 1.12. The yeast should have been okay unless you just got a bad pack. Maybe take a taste of the wash. Check the ending gravity to make sure you are finished, of course after the sparkeloid you should be, but as long as you have an good ending gravity I'd go ahead and distill it anyway.
