I am looking into purchasing a PSII high capacity 8 gallon still with the 1500W stainless steel cartridge heater (http://www.brewhaus.com/Moonshine-Still-Cartridge-Heater.aspx?ItemId=9642145). My question is will this produce enough heat and do I need a heater controller so that I can change temps during the process? I plan on running it in both pot and reflux mode.

yep that will work great and yes you need a controller. Leave it on full until you get up to temp and then turn it down to desired output
