I am in the process of redistilling 3 batches of stripped spirits and was wondering if it was ok to shut down still at night and restart in the morning?? 48' by 3' offset nixon stone still?? would my copper packing get sour?

Yes it's okay to shut down and start up again tomorrow. I've done it several times and don't worry about your copper.

When ever I shut down at night I was told to take out the thermometer and or the thumper because then u will relieve the little pressure that has built up inside and reduce the chance of an inplosion from the out side in. Dont think that could happen but better be safe then sorry later.
