"I am sure this has been covered several times, but here we go. I have a psII pro. My unit does not have a needle valve to control flow. When per say running say a corn mash, to retain the corn flavor do I run the unit at a higher temp say 84 c and run the cooling water wide open? Does the flow of the water have to be controlled or is the objective to keep the condenser cold all the time and adjust the heat to adjust the flow or what. Sorry to ask probably a stupid question, but I guess that is what the forum is for. Thanks Jim"

To run the unit as a Pot Still, you will connect only the top portion of the column to the kettle, and will not run water to the column- only the condenser. You are not trying to force any reflux, so run your cooling water in the bottom of the condenser and out the top.
