i am looking for a tequila recipe. i saw in a post on 2/14/06 that rick said the schnapps yeast was good for tequila.i have agave nectar. if any one knows the amounts of ingredients for a 25l wash i would be grateful. i have read the archives and have found that the agave equal 1part to 4parts sugar.

Never made it yet, but have been studying. I would go for a OG of 1080 or just a touch over that. The schnapps yeast should work good at this level. just for interest, those of you who are doing a blue agave batch, could you order an essence, the black label gold tequila (5 stars), and give us a comparison. My son likes the white tequila, but it has only been getting one star in that particular forum. Please give us an update, and comparison if willing.

I just added the still spirits white to the list but it won't show a new post due to the edits. Bear in mind any ratings are done solely on the basis of turning the neutral to the flavor. None of them will ever live up to a 'True' run, they are mostly just an easy way to convert a bottle or two without having to do a whole run."

I guess i will add this to my agenda- a full complete blue agave run whenever I am next able to. Next to the rateings for the gold essence, it should be supurbe. Do you have a particular yeast, that is special for this?"

No sorry on that one. I know a guy in the southern part of Oregon that made a 'perfect' tequila but have been out of touch for several years. Howie asked me to poke around and get him a tequila recipie. He can get corn and molassis pretty easy and tons of cheap raw cane sugar but most everything else comes by the slow boat and costs a lot for handling.

Just curious, but have read good reviews on the black label gold, very poor reviews on the white, both prestige brands. The gold is reported to relate like quality imports of the real stuff. I haven't tried it, and couldn't judge it anyhow, but am curious for my son and wife, that like tequilla. Would like to make them some of the best."

The white is actually undergoing an overhaul, as the current one is more like a smooth Agave schnapps than a Tequila. This was in the works prior to Gert's fire, so it may be a little while before the new essence is completed.
