"Howdy all:

I made some potato wine and ran it through the cooker at between 92-95C. Result was about 1.5 gallons from 5 gallons of mash.

Since ethanol boils at 78.5 I suspect my second pass should be at a much lower tempature, but I've also heard that I should add water before making a second or third pass. Adding water will bring the boiling temp closer to 100C.

Any advice on temp control? How much water should I add?"

if I'm not mistaken, adding water, enough to bring it down to about 45% and then doing the second run at a controlled 78C helps the still not run dry.
