\/--\/--\ first are you using turbo yeast or a regular strain such as lavlin e-1118 champaign whitch by the way will make a potent mash 20% if you use the recipe i gave the forum a few days ago and let mixture set for two days in gal. jar. if you are using a turbo and it has cleared out cosiderably you should pour off into five gal. plastic primary fermentor. let set for three more days. then check alc. content using your alcometer. if your using aregular strain let set for one more week. then let it clear out and pour off into five gal. primary fermentor let set for four or five days sealed whith airlock. and when it has cleared out check alc. whith alcometer.

wrong wrong more wrong. first you have no need to cook mash 5 days. If you mash a few hours should do. mashing is converting starches to sugars so you need a starch test to verify the starches are now sugars use iodine for that. to test begining and ending ferment gravities you need a beer and winemakers hydrometer. The alcometer is used for things like blending down strong vodka when making cordials. alcometers are not very well suited to most ferments and are calibrated for alcohol and water blends not beers and wines.
