"I was looking at the rum turbo yeast and the directions say ""Due to the high osmotic pressure of molasses, it is not advised to ferment above 10-11% abv when using only diluted molasses.""

I am wondering why?"

Because the high osmotic pressure will inhibit the yeast from being able to do its job (ie. ferment).

So it is not so much that is not recommended as much as it will not be able too. correct?
