I have read that you can use all different kinds of wood to age, but what I was wondering if anyone has ever used peach wood whether it be medium or heavy toasted and if it would have a good flavor or not.

Its all to an individuals taste. Make a few different jugs and see what you prefer.

I have some peach trees that I cut some big limbs from that have been cut down for around 2 months. I was wondering also what the best way to dry it.

Just a guess is if you have a gas oven with a pilot light just leave it in there for a week or so.
