I'm now on my 14th generation now. Does anyone know how many you gens you can get or will it go on indefinitely ?

I've never gone past 6 generations without re-starting from scratch. My backset starts to get very acidic by then and I like to use 25% backset. Have you checked the PH of your ferments up in the 14th generation area? I'm interested how low it gets. A lot of the backset I have stored is ~3.0 for PH. That's about the same as Star-San.

I adjust the PH with ca carbonate using about 1/3 backset and replacing the spent corn off the top. It seems to take a bit longer to start fermenting the more gens I go

I just tried some 6th gen UJSSM that I added 1/2 cup of smoked peated malt to and have had on oak for 3 months. Turned out really smooth. Will do that again.Flapper
