Unless you know the ph of your water, what each grain is going to do, if mashing, or cold ferment, you really need either a set of PH strips to test, cheap, or a ph meter, fairly cheap. Else, use a PH balance formula like Brewhaus sells.
In most cased, you can just follow a recipe from someone in your own area, and you will be safe. Not an exact formula to make it all work well."

I understand what you are saying , the 12 tsp of lemon juice I used in the 6 gallon batch seemed to work fine. Our water here is slightly acidic. Nobody in the area to check with on what they are doing. I'll probably get a ph tester the next time I get to town , several weeks away at this time. Butttttt if you used the 2 tsp of lemon juice per gallon what would the amount of citric acid be per gallon or for a 25 liter mix. Thanks"

I've got a 2nd run of rum going right now, the only difference from this first run is that I moved the copper mesh up to the top of the column. After the heads I took a reading and it was coming out at 155 proof. 2 quarts later it is still at 145 proof. Moving the copper mesh plugs(2) up to the top of the column gave a more consistent heat control and it must have added some reflux to be getting the 155 proof. I think I like the EEHC :)

Edit PS: This run is the best so far in 2 yrs , I've got one gallon jug full/cut to 90 proof. Also have a 1.75 ml bottle full of 90 proof and it's still kicking out 120 proof but the temps starting to come up."
