"I make rum from a sugar/molasses mix. I distill twice with a Brewhaus distiller and after the second distillation I have a very neutral spirit that is around 186 proof. I dumb it down with filtered water to 140 proof before I barrel it and then down to 90 proof before I bottle. After it's been in the bottle a few days condensation forms in the empty neck of the bottle. I never see this w/purchased spirits...

Any clue?

try and find some non ozonated water when diluting down to final proof
