I made a peach mash and when I cook it dident taste like peach anyone know why

I squished 250 lbs of peaches and let them ferment for 12 days then I cooked them I got a very high proof alcohol just did not taste like peaches

If you refluxed it, that would take most of the flavor out. A pot still would give you more flavor but lower alcohol content.

but if you are using a pot still add some of you wash to a tumper and you'll get plenty of taste

But remember, if you didn't make cuts the very highest proof likker was prolly foreshots and or heads.....and it would taste pretty much like acetone.

I tend to agree with the previous thread responses, if you used peach it should have a peach "taste right".
This may have to do with the type of still you used perhaps.
If your ABV is over 83% then you are starting to head towards what is called a neutral spirit (Vodka).
My best guess is that could have been your issue, check your ABV and adjust accordantly.
