I made a peach mash and when I cook it dident taste like peach anyone know why

"I'm guessing of course on why your's didn't give you the taste you were after but maybe your stillin technique was off.

I squished 250 lbs of peaches and let them ferment for 12 days then I cooked them I got a very high proof alcohol just did not taste like peaches

If you refluxed it, that would take most of the flavor out. A pot still would give you more flavor but lower alcohol content.

I tend to agree with the previous thread responses, if you used peach it should have a peach "taste right". This may have to do with the type of still you used perhaps. If your ABV is over 83% then you are starting to head towards what is called a neutral spirit (Vodka). My best guess is that could have been your issue, check your ABV and adjust accordantly.
